This is a nice cool and mild tasting Raita, though it could probably work easily for other cuisines by substituting dill or mint for the cilantro. Less garlic is better than more.
-2 cups plain yogurt, whole milk or non-fat as you please
-2 cucumbers, peeled and grated
-1 tsp salt
-2-3 garlic cloves, mashed
-3 tbsp chopped cilantro
-pepper to taste
Mix the grated cucumbers with salt and let sit in a colander over a bowl or plate to drain excess liquid. After 15-20 min, squeeze out cucumbers as much as possible and in a bowl combine with yogurt, garlic, cilantro, and pepper.
